What does that mean?

The black line is what can best be described as the "ideal" for the sound of headphones. Harman Audio has been conducting scientific studies for years, partly with the aim of finding out how headphones should sound to please the absolute majority of people. So here, from left to right, we first have the low bass, then bass, the mids, and then the treble goes up a little for the first time - this frequency range is naturally amplified by the shape of the human ear, so the measurement does not look flat at this point.
