What does that mean?
The dashed black line represents the Harman target, a reference frequency response developed based on consumer preferences. The red/blue line represents the measurement of the HD600. In practice, it shows how much the headphone's frequency response deviates from the target. However, note that the target is highly smoothed, and it is not necessary to strictly adhere to the Harman target for a headphone to sound good.
This one, being an open headphone, has a slight rolloff in the subbass, very even mids and a slight emphasis around 3kHz. The mids in particular are very realistic and natural.
The emphasis around 3kHz and above 10kHz give it an extra amount of resolution and airiness, which is what makes this headphone a reference for many.
