The dashed black line represents the Harman target, a reference frequency response developed based on consumer preferences. The red/blue line represents the measurement of the HD600. In practice, it shows how much the headphone’s frequency response deviates from the target. However, note that the target is highly smoothed, and it is not necessary to strictly adhere to the Harman target for a headphone to sound good.
Being an open headphone, it has a slight roll-off in the sub-bass, very even mids, and a slight emphasis around 3 kHz. The midrange in particular comes across as very realistic and natural.
The emphasis around 3 kHz and above 10 kHz adds extra resolution and airiness — which is exactly why this headphone has become a reference for so many.
